You know what they say “Breakfast is the most important meal of the day” ?
This is the ideal breakfast muffin. It’s packed with lots of protein, low sugar, and healthy carbs. I keep these around for those days when I need a quick snack after a workout or breakfast on the go.
Dry Ingredients:
- 3/4 cup whole-wheat flour
- 3/4 cup oat-bran cereal
- 1/2 tsp Apple Spice mix (see mix below)
- 1/2 cup Sucanat or rapadura sugar
- 1/2 tsp sea salt
Wet Ingredients:
- 1 banana, mashed
- 1/2 cup plain Greek yogurt
- 1 egg or 2 egg whites (beaten)
- 2 Tbsp unsweetened applesauce
- 1 tsp vanilla extract
- carrot (peeled and grated)
- 1/2 cup chopped, pitted dates or raisins (I like to mix both)
- 1/2 cup chopped walnuts or pecans (I like to mix both)
Directions:
Preheat oven 425 Fahrenheit/ 220 Celsius; Use muffin pan with muffin cup lining; Combine all dry ingredients in a large bowl ; Pour wet ingredients into dry ingredients and mix well; Spoon batter into muffin liners and bake for 15-20 minutes. Don’t over fill muffin liners; leave a little room. Remove from oven and let them sit for 10 minutes.
Apple spice mix:
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/4 tsp ground cardamom
Mix together well; store until ready to use
