Berry Me in Pancakes

Ingredients

1 cup whole wheat flour
1/2 tsp baking soda
1 tbsp vanilla extract
1 cup milk of choice (I used unsweetened almond milk)***
1/2 a ripe banana ***
1 tbsp of cinnamon ( anti-inflammatory purposes and sweetness)
A drizzle of honey (I didn’t use any, no sugar for me, but a little honey won’t hurt you ?)* A drizzle of nut oil of choice(I used walnut oil)*** Handful of berries (blackberries add sweetness)***

The recipe calls for 2 bowls to separate dry and wet ingredients, but I used one bowl, just don’t over mix ingredients if you choose to go with one bowl. Mix flour, baking soda together with vanilla extract, milk, and banana. Mix to get rid of streaks, but don’t over mix. Leave some lumps. If you over mix they will be rubbery.

Prep a non-stick skillet with oil and heat over medium heat. Spoon the pancake mix in, flipping when you see bubbles. Cook both sides, until golden brown.

*** I lightly pat with real butter while pancake are warm, not margarine. Remember, eat real food. Margarine or soft butters are processed.

Top with a drizzle of honey, not too much and add berries. Your kids will love these and they are quick and easy. Happy eating!!! Let me know if you try this great recipe.
